I’m on a couple of kicks…burgers and freezer meals. I found the recipes here, here and here. 4 pounds of ground beef made about 20 large burgers. I wrapped each one in wax paper, popped them into freezer bags and away they went.
Jalapeno Burgers
2 pounds lean ground beef
1 1/4 cups white onion, diced1/2 cups fresh cilantro, chopped4 cloves garlic, minced
1 jalapeño pepper, diced2 teaspoon dried cumin
2 teaspoon dried paprika
2 teaspoon red pepper flakes
**Update 7/21 – these pack a lot of flavor. Delish when served up with guacamole. No bun needed.
Teriyaki Burgers
1 pound ground beef
1/4 cup gluten free soy sauce
1/4 cup green onions/scallions, thinly sliced
1 teaspoon fresh ginger, grated
1/4 teaspoon ground black pepper
1 teaspoon garlic, minced
**Update 7/26 – Good flavor, but a little too salty. I’ll need to tweak the measurements if I make them a second time. They’d be really good for lettuce wraps.
Spinach Burgers
1 pound lean ground beef
1 cup fresh spinach, coarsely chopped
3/4 cup fresh mint, coarsely chopped
1 tbsp flax meal + 3 tbsp warm water
1 Tablespoon lemon juice
