It was another night of whipping up something from items on hand, as I had no desire to go to the grocery store. I drew inspiration from two different recipes and this is the result. By the way, I went brave and made a ton! It turned out well, so I’m glad that I did. I believe it will go well along side salmon or chicken.
Brown Rice with Dill, Walnuts and Raisins
4 cups cooked long grain brown rice
1/2 cup raisins
2 handfuls walnuts, toasted
Juice from one medium-large lemon
1-2 tbsp olive oil
Dried dill
Salt
Pepper
Mix well and adjust seasonings to taste.
