I wanted to use this week’s cilantro bundle in a salad dressing, so I went searching and found this recipe. I didn’t have fresh ginger on hand, so I subbed ground ginger. It’s pretty tangy, but good. In addition to using it on salad, I put some on baked tilapia and really liked it. I think it would also be good on salmon.
Lemon Cilantro Ginger Salad Dressing
1/4 cup fresh cilantro
1 tsp ground ginger
1 tsp mustard powder
1/4 tsp turmeric
1 tsp minced garlic
1/4 tsp pepper
1/4 tsp salt
3 tbsp lemon juice
2 tbsp cider vinegar
1/2 cup olive oil
Blend until smooth.
