I’m posting this for Kelly. It’s my yummy Southwestern Chicken Bowl. It was inspired by a blog post I stumbled upon one day, but I didn’t bookmark it. So I’m sorry that I’m not giving you proper credit, Mr Blog Man.
Anyway, this is a lunch favorite of mine. The guacamole is a tomato-free version, but you could certainly add them in.
Southwestern Chicken
⅓ cup canola oil
3 tbsp vinegar
1 tbsp fresh cilantro, chopped
2 tsp chili powder
1 tsp garlic powder
1 tsp Italian seasoning
½ tsp cumin
½ tsp salt
¼ tsp pepper
2 chicken breasts
Guacamole
1 avocado
½ onion, minced
1 clove garlic, minced
Lime juice
Cilantro, chopped
Salt
Paprika
Garlic powder
Black Beans
1 can organic black beans
Cumin
Salt
Garlic powder
Greens
Romaine lettuce or green leaf lettuce, chopped
Blend marinade. Marinate chicken for 30 minutes. Grill chicken and cut into bite size pieces. Mix up the guacamole and season, as needed. Heat the black beans and season, as needed.
In a bowl, combine chicken, black beans, guacamole and greens. Enjoy!
