Happy Birthday to me!
Since my traditional birthday cake days are behind me, I will be making this yummy treat for myself tonight. These truffles are my absolute favorite dessert and people love them! Bunco girls – you’ll get a chance to taste them in August when it’s my turn to bring the sweets.
1 cup raw pecans
½ cup raw almonds
1 cup pitted dates
1 tbsp cinnamon
Pinch of salt
3 tbsp agave nectar
Dried coconut
Extra cinnamon
Process nuts in food processor until they resemble crumbs. Add dates, cinnamon, salt and agave nectar. Process until well-blended.
Mix a touch of cinnamon and dried coconut on plate. Using a cookie scoop, roll dough into balls. Cover outside with cinnamon/coconut mixture. Refrigerate for 2-3 hours or until ready to serve. Can be made several days ahead.
